I'm a big fan of Allrecipes.com and I'm always trying new recipes from the site. Since it was a busy day, and I knew I'd be gone in the afternoon, I decided to pull out my crock pot. I settled on a chicken dish called "No Time to Cook Chicken." It sounded SUPER easy, it got great reviews, and it was very frugal, so I was willing to try it!!

I tweaked it just a bit: I seasoned the chicken breasts with poultry seasoning, garlic, and salt and pepper before I put them in the crock pot, and I also added some Wortchershire Sauce and a little milk to the two cans of soup. I also added a bit more sour cream at the end, but that's just my preference! We had our chicken and "gravy" over egg noodles with green beans on the side. (I'm thinking it'd be tasty over rice or mashed potatoes, too!) I have to say: DELISH!! Even the kids, who can sometimes be picky, really enjoyed it!! What a delightful meal!
Sine I'm always trying to think frugally, I broke down this meal, dollar-wise, to see how much it cost us. This is what I came up with:
Chicken: $3.31 (Safeway had bags of frozen chicken breasts on sale for $6.62 and I used half the bag)
Egg Noodles: FREE (They were on sale and I had a coupon to make them free)
2 cans of soup: 60 cents (I got them for 30 cents each)
Sour Cream: 75 cents (I used half a container that was $1.50)
Green Beans: FREE (My mom's yummy canned green beans!)
Total: $4.66
For our family of 4, that is about $1.15 per person!
PLUS, I had enough leftovers for another ENTIRE meal!!
If that's not a frugal meal, I don't know what is!! And, tasty to boot!

I just made this recipe tonight...it was YUM-O! I tweaked it a bit, too. 1 can cream o'mushroom instead of celery, soy sauce, cayenne pepper. I also used chicken tenders instead of breasts. I think if you used all cream of mushroom, added some extra mushrooms at the end, and used beef of any kind (skirt steak, stew meat, etc.) it would make a GREAT stroganoff!
