My father-in-law is growing Basil and he gave a bunch of it to me!! I haven't worked a lot with Basil and am not as "schooled" on it as I'd like to be, but I do know that I LOVE Pesto!! I'm sure many of you have made Pesto before, but this was my first time!! If you can believe it, I don't have a food processor (I know....what am I thinking?!) We got one for a wedding gift, but I never used it, so we sold it in a garage sale years ago. Then, a few years later, I realized I wanted one, so I bought the mini Kitchen Aid one. I loved it, but ended up losing the blade and never got a replacement. I have supplemented here and there with my Baby Food grinder/processor for other recipes, but for this recipe, it was waaaaaay too small. So, I tried to think positively, and I pulled out my blender! It actually turned out beautifully!!!

For 5 cups of Basil, it doesn't make a lot, but it will make enough for, at least, 4 meals. I put one container in the fridge and am freezing the other three. It is DELICIOUS!!! Can't wait to eat it!!
Yummy!! I just made pesto for the FIRST time, too!!! But I added too much salt, so......I'll just have to use a LITTLE at a time. :) Yours looks sooo yummy! Did you get more muffins done today? I bought some canning jars yesterday to make jam!! I'm going to process them so that I don't have to freeze them--not enough freezer space. I'll let you know how it goes!
ReplyDeleteOh, I bought pectin for 2/$4 yesterday with a free bag of sugar when you purchase four! Yes--I should have my own blog!!! :)
Oh yeah, and talk about frugal, I saw a nice-looking cooler sitting by the dumpster in my compound here and decided to take a look. Aside from being stinky dirty, it was beautiful!! Full-size, Coleman, wheels, closes well, silver/white, soooooo nice! I'll have to scrub it A LOT but it should be golden. I'm so excited!
